Mixed Spice

So-called mixed spice is possibly the most commonly-used blend in Malta. It seems to be an import from England, in the days when most people cooked at home. Sadly, it’s not easy to find outside Malta, and even locally the blends differ substantially from one source to another…
Over the past few years I’ve been experimenting with making my own blend. One can find several recipes, and it clearly takes time to try them out and see what works and what doesn’t. Here is just a note to self with the ingredients and proportions as used in the latest blend:

  • 4tsp coriander seeds
  • 4tsp cinnamon
  • 3tsp allspice
  • 1tsp nutmeg
  • 1tsp dry ginger
  • 1tsp cloves

All ingredients are to be used and measured ground. It appears this latest mix is still somewhat strong on the cinnamon. Next time I’ll try reducing that.
